Method
- Preheat oven to 425°F (220°C).
- On a large sheet pan, toss halved baby potatoes with 1 tbsp olive oil, garlic powder, thyme, salt, and pepper.
- Roast potatoes for 15 minutes.
- Meanwhile, rub steak with remaining 1 tbsp olive oil, salt, and pepper.
- After 15 minutes, push potatoes to one side. Add green beans and steak to pan.
- Roast 10–12 minutes more, or until steak reaches desired doneness (135°F for medium-rare, 145°F for medium, 160°F for well-done).
- Let steak rest for 5 minutes. Slice and serve with veggies.
Notes
Marinate steak 30 minutes to 4 hours ahead for more flavor. Use thawed frozen veggies if needed. Store leftovers in the fridge up to 3 days. Serve with chimichurri, balsamic reduction, or crusty bread.
