Herbed Steak Sheet Pan Dinner

A quick and easy one-pan dinner with steak, roasted potatoes, and green beans, seasoned with herbs and ready in under 30 minutes. Great for busy weeknights and meal prep.

Ingredients
  

  • 1 lb steak sirloin or flank
  • 2 cups baby potatoes halved
  • 1 cup green beans trimmed
  • 2 tbsp olive oil divided
  • 2 tsp garlic powder
  • 2 tsp dried thyme
  • Salt and pepper to taste

Method
 

  1. Preheat oven to 425°F (220°C).
  2. On a large sheet pan, toss halved baby potatoes with 1 tbsp olive oil, garlic powder, thyme, salt, and pepper.
  3. Roast potatoes for 15 minutes.
  4. Meanwhile, rub steak with remaining 1 tbsp olive oil, salt, and pepper.
  5. After 15 minutes, push potatoes to one side. Add green beans and steak to pan.
  6. Roast 10–12 minutes more, or until steak reaches desired doneness (135°F for medium-rare, 145°F for medium, 160°F for well-done).
  7. Let steak rest for 5 minutes. Slice and serve with veggies.

Notes

Marinate steak 30 minutes to 4 hours ahead for more flavor. Use thawed frozen veggies if needed. Store leftovers in the fridge up to 3 days. Serve with chimichurri, balsamic reduction, or crusty bread.
