Ingredients

  • 500 g fresh broccoli florets about 4 cups
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper or to taste
  • 2 tablespoons nutritional yeast
  • 1/2 cup grated parmesan cheese
  • 1 tablespoon lemon juice
For Greek Yogurt Dipping Sauce:
  • 1/2 cup plain Greek yogurt
  • 1 clove garlic minced
  • 1 tablespoon lemon juice
  • salt and pepper to taste

Equipment

  • Air Fryer
  • Large mixing bowl
  • Small bowl for sauce
  • cutting board
  • Measuring spoons and cups
  • Kitchen towel
  • Oven mitts
  • Serving dish

Method

  1. Rinse the fresh broccoli florets under cold water and pat them dry thoroughly with a clean kitchen towel. This step is crucial for achieving crispiness.
  2. In a large mixing bowl, toss the broccoli florets with olive oil, garlic powder, salt, black pepper, and nutritional yeast until evenly coated.
  3. Preheat the air fryer to 200°C (400°F) for about 5 minutes. Preheating helps the broccoli cook evenly and achieve perfect crispy texture.
  4. Place the seasoned broccoli florets in the air fryer basket in a single layer. Don't overcrowd the basket or the broccoli won't cook evenly.
  5. Set the timer for 8 minutes and shake the basket halfway through cooking.
  6. After 8 minutes, sprinkle the grated parmesan cheese over the broccoli and cook for an additional 2 to 3 minutes until cheese is melted and broccoli has a golden-brown char.
  7. While broccoli cooks, prepare the Greek yogurt dipping sauce by mixing Greek yogurt, minced garlic, lemon juice, salt, and pepper in a small bowl.
  8. Transfer broccoli to a serving dish, drizzle with fresh lemon juice, and serve with Greek yogurt dipping sauce on the side.

Notes

Choose vibrant green florets that are firm and tightly packed. Cut larger florets into bite-sized pieces for even cooking. Don't overcrowd the air fryer basket - cook in batches if needed. Add parmesan cheese in the last 2 to 3 minutes to prevent burning. Use full-fat Greek yogurt for creamiest dipping sauce. For extra protein, sprinkle with hemp seeds or add hard-boiled egg slices.
