  • 1 cup Enchilada Sauce Store-bought or homemade
  • 2 cups Rotisserie Chicken Breast Shredded
  • 1 packet Taco Seasoning Adjust based on heat preference
  • 1 medium Red Bell Pepper Diced
  • 1 cup Canned Corn Drained
  • 1 can Black Beans Rinsed thoroughly
  • 1 cup Shredded Cheese Mexican Blend or Cheddar
  • 1 cup Chopped Cilantro For garnish
  • 1 medium Avocado Sliced for garnish
  • 1 cup Greek Yogurt or Sour Cream Optional

Method
 

  1. In a food processor, combine low-fat cottage cheese and enchilada sauce. Blend until smooth, about 30 seconds.
  2. Transfer the mixture to a large mixing bowl. Add shredded rotisserie chicken and taco seasoning, mixing well to combine.
  3. Gently fold in the diced red bell pepper, drained canned corn, and rinsed black beans until evenly distributed.
  4. Portion the mixture into microwave-safe bowls. Sprinkle shredded cheese on top.
  5. Heat in the microwave for 1-2 minutes, or until the cheese is melted and the mixture is warm.
  6. Remove from the microwave and top each bowl with freshly chopped cilantro, avocado slices, and Greek yogurt or sour cream if desired.
