- Cook penne pasta according to package directions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add onion and garlic, sauté until fragrant, about 2-3 minutes.
- Add ground beef and cook until browned, breaking up with spoon as it cooks.
- Stir in diced tomatoes with juices and beef broth. Simmer for 5 minutes.
- Remove from heat and stir in Greek yogurt, Parmesan cheese, Italian seasoning, salt, and pepper until smooth.
- Add cooked pasta to the skillet and toss until well combined.
- Serve immediately, garnished with fresh basil or parsley.
Notes
For best results, remove pan from heat before adding Greek yogurt to prevent curdling. Add vegetables like spinach or bell peppers for extra nutrition.
