- Cut the beef chuck roast into bite-sized pieces and season with salt and pepper.
- Halve the baby potatoes and chop the onion.
- Boil the halved baby potatoes in salted water for about 5-7 minutes, then drain and set aside.
- In a skillet over medium-high heat, sear the seasoned beef pieces in batches for 2-3 minutes on each side until browned.
- In a mixing bowl, combine melted butter, minced garlic, beef broth, Worcestershire sauce, dried thyme, and dried rosemary. Whisk until well mixed.
- In the slow cooker, add the seared beef, cooked baby potatoes, and chopped onion. Pour the garlic butter sauce over the top and stir gently to combine.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until the beef is tender.
- Garnish with freshly chopped parsley before serving.
