- In a medium saucepan, combine water, granulated sugar, salt, and vegetable oil. Bring to a boil over medium heat.
- Remove from heat and stir in all-purpose flour until a ball forms. Allow to cool slightly.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla extract until smooth.
- Heat oil in a deep skillet or pot to 350°F (175°C).
- Transfer churro dough to a piping bag fitted with a star tip. Pipe 4-6 inch strips into hot oil, cutting with scissors.
- Fry churros for 2-3 minutes on each side until golden brown. Remove and drain on paper towels.
- In a shallow dish, mix granulated sugar and ground cinnamon. Roll warm churros in the mixture to coat.
- For the chocolate dip, heat heavy cream in a small saucepan until simmering. Remove from heat and stir in chocolate chips and vanilla extract until smooth.
- Serve churros warm with chocolate dip.
