Homemade Reuben Bake

A delicious casserole version of the classic Reuben sandwich with layers of rye bread, corned beef, Swiss cheese, and sauerkraut.

Ingredients
  

  • 8 slices Rye Bread Cut into cubes or slices
  • 2 cups Corned Beef Thinly sliced or shredded
  • 2 cups Swiss Cheese Shredded
  • 1 1/2 cups Sauerkraut Well drained
  • 1 cup Thousand Island or Russian Dressing
  • 2 tbsp Butter For greasing baking dish
  • 1 tsp Garlic Powder
  • 1 tbsp Dijon Mustard

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish with butter.
  2. Cut the rye bread into cubes or slices and arrange half of the bread in a single layer at the bottom of the greased baking dish.
  3. Layer half of the corned beef over the bread, followed by half of the shredded Swiss cheese and half of the drained sauerkraut.
  4. In a small bowl, mix the Thousand Island dressing with the Dijon mustard and garlic powder. Spread half of this mixture over the sauerkraut layer.
  5. Repeat the layers with the remaining ingredients, finishing with cheese on top.
  6. Cover the baking dish with aluminum foil and bake for 20-25 minutes.
  7. Remove the foil and bake for an additional 10-15 minutes, until the cheese is melted and bubbly, and the top is golden brown.
  8. Let the Homemade Reuben Bake rest for 5-10 minutes before serving to allow the layers to set.

Notes

For extra flavor, you can butter the bread slices before cutting them. If you prefer a less tangy sauerkraut flavor, rinse it briefly before draining thoroughly.
