- Heat a drizzle of olive oil in a large pot over medium heat. Add the Italian sausage and cook until browned, about 5-7 minutes. Break it into smaller pieces as it cooks. Remove the sausage and set aside.
- In the same pot, add the diced onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute.
- Pour in the chicken broth and bring to a gentle simmer. Add the thinly sliced potatoes and cook until tender, about 10-15 minutes.
- Return the cooked sausage to the pot and add the chopped kale. Cook together for another 5 minutes until the kale wilts.
- Reduce heat to low and stir in the heavy cream. Season with salt, pepper, and red pepper flakes. Heat through for a few minutes without boiling.
- Ladle the warm soup into bowls and enjoy hot. Garnish with extra kale or cheese if desired.
