Ingredients
  

For the Salmon

  • 4 fillets Salmon Fresh salmon fillets for glazing.
  • 1/4 cup Honey Provides sweetness to the glaze.
  • 1/4 cup Soy sauce Adds umami flavor.
  • 1/4 cup Apple cider vinegar Gives tanginess to the glaze.
  • 1 tablespoon Dijon mustard Adds depth to the flavor.
  • 1 teaspoon Garlic powder Enhances the glaze flavor.
  • 1 teaspoon Onion powder Adds savory notes.

For the Yellow Rice

  • 1 cup Long-grain rice Base for the yellow rice.
  • 2 cups Chicken or vegetable broth For cooking the rice.
  • 1/2 teaspoon Turmeric Gives the rice its yellow color.
  • 1/2 teaspoon Salt For seasoning the rice.
  • 1 tablespoon Olive oil For sautéing the rice.

For the Sautéed Shrimp

  • 1 pound Shrimp, peeled and deveined Fresh shrimp for sautéing.
  • 2 tablespoons Olive oil For cooking the shrimp.
  • 2 cloves Garlic, minced Adds flavor to the shrimp.

For the Cheese Broccoli

  • 2 cups Broccoli florets Fresh broccoli for steaming.
  • 1/2 cup Shredded cheese Cheddar or your choice.

For the Cajun Corn

  • 2 cups Corn Fresh or frozen corn.
  • 1 tablespoon Olive oil For sautéing the corn.
  • 1 teaspoon Cajun seasoning Adds flavor to the corn.

Instructions
 

  • In a small saucepan, combine honey, soy sauce, apple cider vinegar, Dijon mustard, garlic powder, onion powder, salt, and pepper. Heat over medium heat until it simmers, then cook for about 5 minutes until it thickens slightly.
  • Place the salmon fillets in a shallow dish and pour the honey bourbon glaze over them. Cover and marinate in the refrigerator for at least 30 minutes.
  • In a medium saucepan, heat olive oil over medium heat. Add the rice and sauté for 2-3 minutes. Pour in the broth, turmeric, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until cooked.
  • In a skillet, heat olive oil over medium-high heat. Add minced garlic and sauté for 30 seconds. Add shrimp, season with salt and pepper, and cook for 3-4 minutes until pink and opaque. Garnish with parsley.
  • Preheat the oven to 400°F (200°C). Place marinated salmon on a lined baking sheet and brush with remaining glaze. Bake for 12-15 minutes until cooked through.
  • Serve the dish by layering yellow rice, topped with salmon, sautéed shrimp, cheese broccoli, and Cajun corn.
