- In a medium bowl, whisk together honey, soy sauce, olive oil, minced garlic, ground ginger, black pepper, and salt.
- Place chicken thighs in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
- While the chicken is marinating, prepare the honey garlic sauce by pouring the reserved marinade into a small saucepan. Bring to a boil over medium heat, then reduce heat and let simmer for 5-7 minutes until thickened.
- Preheat your oven to 400°F (200°C). Remove the chicken from the marinade and place it skin-side up in a baking dish. Pour any remaining marinade over the chicken.
- Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and the skin is golden brown and crispy. In the last 10 minutes, brush the thickened honey garlic sauce over the chicken.
- Let the chicken rest for a few minutes before serving to allow juices to redistribute.
- Garnish with sesame seeds and chopped green onions before serving.
