Ingredients
  

For the Salmon

  • 4 fillets Salmon Fresh salmon fillets for best flavor.
  • 1/4 cup Honey Adds sweetness to the glaze.

  • 2 cloves Garlic Minced for flavor.

For the Roasted Potatoes

  • 1.5 pounds Baby potatoes Halved for roasting.
  • 3 tablespoons Olive oil For coating the potatoes.
  • 1 teaspoon Paprika Adds flavor and color.
  • to taste Salt and pepper For seasoning.

For the Salad

  • 4 cups Mixed greens For a fresh side salad.
  • 1 cup Shredded carrots Adds color and crunch.
  • 1/2 cup Sliced almonds For added texture.

For the Honey-Lemon Dressing

  • 1/4 cup Honey For sweetness in the dressing.
  • 2 tablespoons Lemon juice Adds acidity to the dressing.
  • to taste Salt and pepper For seasoning the dressing.

Instructions
 

  • Preheat your oven to 375°F (190°C) for the salmon and 400°F (200°C) for the potatoes.
  • Prepare the salmon by placing the fillets on a baking sheet lined with parchment paper.
  • In a small bowl, mix together honey, Dijon mustard, minced garlic, and black pepper.
  • Brush the honey mustard mixture generously over each salmon fillet.
  • In a large bowl, toss the halved baby potatoes with olive oil, paprika, salt, and pepper until evenly coated.
  • Spread the seasoned potatoes in a single layer on another baking sheet.
  • Place the salmon in the oven and bake for about 15 minutes, while roasting the potatoes for about 25 minutes, flipping them halfway through.
  • Check for doneness: the salmon should flake easily with a fork, and the potatoes should be golden brown.
  • Serve the salmon with roasted potatoes and a fresh salad dressed with honey-lemon dressing.
