- Preheat oven to 425°F (218°C) and line a baking sheet with foil.
- Peel and chop sweet potatoes. Place in a bowl and season with salt.
- Melt butter and olive oil in a saucepan. Add lemon juice, zest, and honey. Simmer 1 minute on low.
- Pour honey-lemon butter over sweet potatoes and toss to coat.
- Spread on baking sheet and roast 25 minutes or until tender and edges are crispy.
Notes
Use quality honey and medium sweet potatoes for best flavor. Store cooked sweet potatoes in the fridge up to 4 days. Variations include using maple syrup, spices, or coconut oil.
