Ingredients
  

  • 1 pound Boneless, skinless chicken breasts Sliced into strips.
  • 1 tablespoon Olive oil For sautéing.
  • 1 medium Bell pepper Sliced (any color).
  • 1 medium Onion Sliced.
  • 2 cloves Garlic Minced.
  • 1 teaspoon Chili powder For flavor.
  • 1 teaspoon Cumin For flavor.
  • 1 teaspoon Paprika For flavor.
  • 1/2 teaspoon Salt To taste.
  • 1/4 teaspoon Black pepper To taste.
  • 1/4 teaspoon Cayenne pepper Optional, for heat.
  • 1/2 cup Chicken broth For moisture.
  • Tortillas For serving.

Instructions
 

  • Slice the boneless, skinless chicken breasts into strips and season with chili powder, cumin, paprika, salt, black pepper, and cayenne pepper if desired.
  • Slice the bell pepper and onion into thin strips, and mince the garlic.
  • In a large bowl, combine the sliced chicken with the spices and mix well.
  • Set the Instant Pot to the sauté function and heat the olive oil. Add the seasoned chicken strips and cook for 3-4 minutes until lightly browned.
  • Add the sliced bell pepper, onion, and minced garlic to the pot and sauté for another 2-3 minutes.
  • Pour in the chicken broth and stir to combine. Close the lid and set the Instant Pot to cook on high pressure for 8 minutes.
  • Once cooking is complete, perform a quick release of the pressure. Shred the chicken using two forks and mix it with the vegetables.
  • Serve the chicken and vegetable mixture in warm tortillas with your favorite toppings.
