- Slice the boneless, skinless chicken breasts into strips and season with chili powder, cumin, paprika, salt, black pepper, and cayenne pepper if desired.
- Slice the bell pepper and onion into thin strips, and mince the garlic.
- In a large bowl, combine the sliced chicken with the spices and mix well.
- Set the Instant Pot to the sauté function and heat the olive oil. Add the seasoned chicken strips and cook for 3-4 minutes until lightly browned.
- Add the sliced bell pepper, onion, and minced garlic to the pot and sauté for another 2-3 minutes.
- Pour in the chicken broth and stir to combine. Close the lid and set the Instant Pot to cook on high pressure for 8 minutes.
- Once cooking is complete, perform a quick release of the pressure. Shred the chicken using two forks and mix it with the vegetables.
- Serve the chicken and vegetable mixture in warm tortillas with your favorite toppings.
