Method
- Preheat your oven to 400°F (200°C).
- Rinse the cherry tomatoes under cold water and pat them dry. Mince the garlic cloves finely.
- In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente, about 8-10 minutes. Reserve 1/2 cup of pasta water before draining.
- In a baking dish, place the block of feta cheese in the center and surround it with the cherry tomatoes. Drizzle olive oil over the feta and tomatoes, then sprinkle with minced garlic, salt, pepper, and red pepper flakes.
- Bake for 25-30 minutes until the feta is golden and the tomatoes are blistered.
- Remove the baking dish from the oven and mash the feta and tomatoes together with a fork until creamy. Add the cooked pasta and toss everything together, adding reserved pasta water as needed to reach desired consistency.
- Serve hot, garnished with fresh basil leaves and grated Parmesan cheese.
