Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • salt and pepper to taste
  • 2 jalapenos seeded and diced
  • 2 ripe peaches peeled and diced
  • 1/4 cup honey
  • 2 tbsp apple cider vinegar
  • 1/4 cup water
  • 1 tbsp cornstarch

Method
 

  1. Preheat the oven to 375 degrees F (190 degrees C). Season the chicken breasts with salt and black pepper on both sides
  2. In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear for 3-4 minutes on each side until golden brown. Remove the chicken from the skillet and set aside
  3. In the same skillet, add the diced jalapenos and peaches. Cook for 2-3 minutes until slightly softened
  4. In a small bowl, whisk together the honey, apple cider vinegar, water, and cornstarch until smooth. Pour the honey mixture over the jalapenos and peaches. Stir well and bring to a simmer
  5. Return the chicken breasts to the skillet, spooning some of the sauce over the top. Transfer the skillet to the preheated oven
  6. Bake for 20-25 minutes or until the chicken is cooked through (internal temperature 165 degrees F)
  7. Remove from the oven and let it rest for a few minutes before serving. Serve hot, spooning the sauce over the chicken

Notes

Remove jalapeno seeds for milder heat. Fresh peaches work best but frozen work too. Chicken is done at 165 degrees F internal temperature. Let rest before serving to keep juices inside.
