- Preheat your oven to 400°F (200°C).
- Pat the pork chops dry with paper towels, rub with olive oil, and season generously with salt and pepper.
- In a large oven-safe skillet, heat 1 tablespoon of olive oil over medium-high heat. Add 4 tablespoons of unsalted butter and 4 minced garlic cloves, sautéing for 1-2 minutes until fragrant.
- In a small bowl, mix together paprika, garlic powder, onion powder, and dried thyme. Sprinkle the spice mixture evenly on both sides of the pork chops.
- Sear the pork chops in the skillet for 3-4 minutes on each side until golden brown. Spoon some garlic butter over the chops.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the internal temperature reaches 145°F (63°C).
- Remove from the oven and let the pork chops rest for 5 minutes. Garnish with freshly chopped parsley before serving.
