  • 1 bunch Kale Remove tough stems and chop into bite-sized pieces.
  • 1 cup Cherry tomatoes Halved for sweetness.
  • 1/2 cup Cucumber Diced for crunch.
  • 1/4 cup Red onion Thinly sliced for sharpness.
  • 1/4 cup Feta cheese Crumbled for creaminess.
  • 1/4 cup Walnuts Roughly chopped for healthy fats.

Lemon Vinaigrette Ingredients

  • 1/4 cup Olive oil Base of the vinaigrette.
  • 2 tablespoons Fresh lemon juice Adds brightness to the dressing.
  • 1 teaspoon Dijon mustard For tanginess.

Instructions
 

  • Wash the kale leaves thoroughly under cold water, remove tough stems, and chop into bite-sized pieces. Place in a large salad bowl.
