Ingredients

  • 2 cups Monterey Jack cheese shredded
  • 16 oz ground beef
  • 0.5 medium onion sliced
  • 1 bell pepper sliced
  • 1 tsp Worcestershire sauce
  • 4 oz cream cheese
  • Salt to taste
  • Pepper to taste

Equipment

  • baking sheet
  • parchment paper
  • large skillet
  • Spatula
  • measuring cups

Method

  1. Preheat oven to 350°F (175°C). Line baking sheet with parchment paper. Form 8 cheese circles with ¼ cup each. Bake 8–10 minutes until golden and lacy.
  2. Heat skillet over medium-high. Add ground beef and break apart. When partially browned, add onions and bell peppers. Cook 5–7 minutes until beef is browned and veggies are soft. Drain excess grease.
  3. Add Worcestershire sauce, salt, and pepper to skillet. Stir in cream cheese and mix until fully melted and incorporated. Remove from heat.
  4. Let cheese circles cool 1 minute (still flexible). Place 2 tbsp beef mixture on each. Roll or fold cheese around filling. Let cool 2–3 minutes to set.

Notes

Recipe yields 8 rolls. Cheese should be pliable but not hot when rolling. Use lean beef to reduce grease. Great for meal prep and freezer-friendly.
