Keto Steak and Veggies Sheet Pan Dinner with Garlic Caper Butter

Ingredients
  

  • 1/4 cup butter softened
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon capers chopped
  • 1 clove garlic minced into a paste
  • 2 pounds sirloin steak about 1 inch thick
  • Salt & pepper to taste
  • 1 tablespoon olive oil or as needed
  • 1 large head broccoli cut into florets
  • 1 pound asparagus spears

Equipment

  • Large rimmed sheet pan
  • Plastic wrap

Method
 

  1. Preheat broiler and place a large rimmed sheet pan inside to heat.
  2. In a small bowl, mix butter, rosemary, capers, and garlic until well combined.
  3. Shape the butter into a log using plastic wrap and chill in the fridge or freezer until firm.
  4. Pat steaks dry thoroughly with paper towels. Season both sides with salt and pepper.
  5. Toss broccoli and asparagus with olive oil, salt, and pepper.
  6. Carefully remove the hot pan from the oven and coat the center area with olive oil.
  7. Place steaks in the center of the hot pan. Arrange vegetables around the edges in a single layer.
  8. Broil for 5 minutes, then flip steaks.
  9. Return to broiler and cook an additional 5 minutes, or until desired doneness.
  10. Remove from oven. Top steaks with sliced rosemary caper butter and serve immediately.

Notes

To enhance sear, preheat the sheet pan or optionally sear steaks on the stove before broiling. For more browning, broil vegetables an extra 2 minutes if needed. Swap in other keto-friendly veggies or herbs to customize.
