Method
 

  1. In a large skillet, heat olive oil over medium heat. Add diced onion and sauté for 3-4 minutes until translucent.
  2. Stir in minced garlic and cook for another minute until fragrant.
  3. Add ground beef or turkey to the skillet. Cook until browned and fully cooked, breaking it apart as it cooks.
  4. Stir in chili powder, cumin, paprika, salt, and pepper. Cook for an additional 2-3 minutes to meld flavors.
  5. In a separate skillet, sauté cauliflower rice in a little olive oil over medium heat for 5-7 minutes until tender. Season with salt and pepper.
  6. Assemble the bowls by starting with a layer of cauliflower rice, followed by the seasoned meat mixture.
  7. Top with halved cherry tomatoes, diced avocado, and shredded lettuce.
  8. Sprinkle shredded cheese on top, then add a dollop of sour cream and garnish with fresh cilantro.
  9. Serve with lime wedges on the side for squeezing over the bowls.
