Method
 

  1. Gather all your ingredients: Kodiak pancake mix, milk, egg, melted butter, and vanilla extract.
  2. In a large mixing bowl, pour in the Kodiak pancake mix and whisk to break up any lumps.
  3. In a separate bowl, combine the wet ingredients: egg, milk, melted butter, and vanilla extract. Whisk until well blended.
  4. Pour the wet ingredients into the bowl with the dry ingredients and gently stir until just combined. A few lumps are okay.
  5. Heat a non-stick skillet or griddle over medium heat and lightly grease it with cooking spray or butter.
  6. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.
  7. Flip the pancakes and cook for an additional 1-2 minutes until golden brown. Repeat until all batter is used.
