- If using store-bought basil pesto, skip this step. To make your own, blend fresh basil leaves, garlic, pine nuts, Parmesan cheese, and olive oil until smooth. Add a squeeze of lemon juice for extra zing.
- In a bowl, combine the chicken breasts with half of the basil pesto, lemon juice, and a pinch of salt and pepper. Let it marinate for at least 15 minutes.
- Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about a minute until fragrant.
- Add the marinated chicken breasts to the skillet. Cook for 5-7 minutes on each side until golden brown and cooked through, reaching an internal temperature of 165°F (75°C).
- Remove the chicken from the skillet and let it rest for a few minutes. Pour in the chicken broth and the remaining basil pesto into the skillet. Stir well and let it simmer for a couple of minutes.
- Serve the chicken drizzled with the sauce and garnish with fresh basil.
