- Prepare the salmon fillets by removing the skin and seasoning with salt and pepper on both sides.
- In a mixing bowl, combine ricotta cheese, Parmesan cheese, chopped basil, lemon zest, lemon juice, salt, and pepper. Mix until smooth.
- Spread an even layer of the lemon basil mixture over each salmon fillet. Roll the fillet tightly and secure with toothpicks if necessary.
- Heat olive oil in a skillet over medium heat. Place the salmon rolls seam-side down in the skillet and cook for 4-5 minutes on each side until golden and cooked through.
- Remove the rolls from the skillet and let them rest for a minute before slicing.
