Method
 

  1. Marinate the chicken by rinsing and patting dry. Season with salt, black pepper, and thyme.
  2. Prepare the spinach pesto by blending fresh spinach, garlic, olive oil, and a pinch of salt in a food processor until smooth.
  3. Heat olive oil in a large skillet over medium heat. Sauté minced garlic for about 1 minute until fragrant.
  4. Increase heat to medium-high and add marinated chicken breasts. Cook for 5-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F/75°C).
  5. Pour in chicken broth and bring to a gentle simmer. Stir in spinach pesto and lemon juice, cooking for an additional 2 minutes.
  6. Serve the chicken garnished with chopped fresh spinach.
