Method
- Preheat your oven to 400°F (200°C).
- Wash the salmon fillets under cold water and pat them dry with a paper towel.
- Trim the asparagus by snapping off the tough ends.
- Mince the garlic cloves, zest the lemon, and juice it, ensuring to catch any seeds.
- In a small bowl, combine minced garlic, lemon zest, lemon juice, oregano, paprika, and 2 tablespoons of olive oil. Mix well to form a marinade.
- Place the salmon fillets in a shallow dish and pour the marinade over them, coating evenly. Let sit for about 10 minutes.
- On one side of a sheet pan, place the trimmed asparagus and drizzle with 1 tablespoon of olive oil. Season with salt and pepper, then toss to coat.
- Place the marinated salmon fillets on the other side of the sheet pan, ensuring enough space between them and the asparagus.
- Bake in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork and the asparagus is tender yet crisp.
- Remove from the oven and let cool for a minute. Garnish with fresh parsley before serving.
