- In a large mixing bowl, combine Greek yogurt, olive oil, lemon juice, lemon zest, minced garlic, chopped rosemary, thyme, parsley, salt, and pepper. Mix until smooth and creamy.
- Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably overnight.
- Preheat your grill to medium-high heat. Lightly oil the grates to prevent sticking.
- Remove the chicken from the marinade, letting excess drip off. Discard the leftover marinade. Place the chicken on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
- Once cooked, remove the chicken from the grill and let it rest for a few minutes before slicing. Serve with your favorite sides.
