- In a medium bowl, combine the fresh lemon juice, Dijon mustard, and honey or maple syrup. Whisk until well blended.
- Gradually add the extra virgin olive oil while continuously whisking to emulsify the dressing.
- Add minced garlic, salt, and pepper to taste. Whisk again to combine.
- If desired, stir in chopped fresh herbs.
- Serve immediately or store in an airtight container in the refrigerator for up to a week.
