Method
- In a medium bowl, combine the fresh lemon juice, Dijon mustard, and honey or maple syrup. Whisk until well blended.
- Gradually add the extra virgin olive oil while continuously whisking to emulsify the dressing.
- Add minced garlic if using, and season with salt and pepper to taste. Whisk again to combine.
- Transfer to a jar or airtight container if not using immediately. Shake well before serving.
Notes
Store in the refrigerator for up to a week. Shake well before use as ingredients may separate.
