Instructions
In a medium bowl, combine the fresh lemon juice, Dijon mustard, and honey or maple syrup. Whisk until well blended.
Gradually add the extra virgin olive oil while continuously whisking to emulsify the dressing.
Add minced garlic if using, and season with salt and pepper to taste. Whisk again to combine.
Transfer to a jar or airtight container if not using immediately. Shake well before serving.
Notes
Store in the refrigerator for up to a week. Shake well before use as ingredients may separate.
