Method
- Rinse the chicken breasts under cold water and pat them dry with paper towels. Pound them to an even thickness of about 1 inch.
- In a shallow dish, mix the bread crumbs, half of the grated Parmesan cheese, Italian seasoning, salt, and black pepper.
- In another bowl, beat the eggs and milk together until well combined. Place the flour in a third dish.
- Heat olive oil in a large skillet over medium heat. Dredge each chicken breast in flour, dip in the egg mixture, and then coat with the breadcrumb mixture.
- Add the coated chicken breasts to the skillet and cook for about 3-4 minutes on each side until golden brown.
- Transfer the cooked chicken to a baking dish. In a small bowl, combine the remaining grated Parmesan cheese, shredded mozzarella cheese, and minced garlic. Sprinkle this mixture over the chicken.
- Bake in a preheated oven at 350°F (175°C) for 20-25 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
