Ingredients
  

  • 4 boneless, skinless chicken breasts about 1.5 lbs
  • 3 medium sweet potatoes peeled and cubed (about 1.5 lbs)
  • 2 tablespoons olive oil
  • ¼ cup Dijon mustard
  • ¼ cup pure maple syrup
  • 3 cloves fresh garlic minced
  • 2 tablespoons low-sodium soy sauce
  • Freshly ground black pepper to taste
  • Salt to taste

Method
 

  1. Preheat oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper and set aside.
  3. Toss sweet potato cubes in olive oil and season with salt and pepper.
  4. In a bowl, whisk together Dijon mustard, maple syrup, minced garlic, soy sauce, and black pepper until smooth.
  5. Place chicken and sweet potatoes together in the prepared baking dish and drizzle half of the sauce over them.
  6. Bake for 25–30 minutes or until chicken reaches an internal temperature of 165°F and sweet potatoes are tender.
  7. Drizzle remaining sauce over the dish before serving.

Notes

Use pure maple syrup for best flavor. For deeper flavor, marinate chicken in the sauce for at least 30 minutes before baking.
