- In a large mixing bowl, whisk together flour, granulated sugar, baking powder, salt, and ground nutmeg.
- In another bowl, combine whole milk, eggs, vanilla extract, and melted butter. Mix until smooth.
- Gradually add the wet mixture to the dry ingredients, stirring gently until a soft dough forms. Do not overmix.
- Cover the bowl with a clean kitchen towel and let the dough rest for about 30 minutes.
- Turn the dough out onto a lightly floured surface and knead gently. Roll out to about 1/4 inch thickness.
- Cut the dough into squares or rectangles, approximately 2 inches in size.
- In a deep skillet or pot, heat about 2 inches of vegetable oil to 350°F (175°C).
- Carefully drop the dough pieces into the hot oil, frying until golden brown, about 2-3 minutes per side.
- Use a slotted spoon to remove the beignets and place them on a paper towel-lined plate to drain excess oil.
- Dust the beignets generously with powdered sugar before serving.

These beignets are best enjoyed fresh and warm, dusted with powdered sugar.
