Instructions
In a large mixing bowl, whisk together flour, granulated sugar, baking powder, salt, and ground nutmeg.
In another bowl, combine whole milk, eggs, vanilla extract, and melted butter. Mix until smooth.
Gradually add the wet mixture to the dry ingredients, stirring gently until a soft dough forms. Do not overmix.
Cover the bowl with a clean kitchen towel and let the dough rest for about 30 minutes.
Turn the dough out onto a lightly floured surface and knead gently. Roll out to about 1/4 inch thickness.
Cut the dough into squares or rectangles, approximately 2 inches in size.
In a deep skillet or pot, heat about 2 inches of vegetable oil to 350°F (175°C).
Carefully drop the dough pieces into the hot oil, frying until golden brown, about 2-3 minutes per side.
Use a slotted spoon to remove the beignets and place them on a paper towel-lined plate to drain excess oil.
Dust the beignets generously with powdered sugar before serving.
