- Preheat your oven to 400°F (200°C).
- In a large baking dish, combine halved cherry tomatoes and Kalamata olives. Drizzle half of the olive oil over the mixture, then add minced garlic, oregano, thyme, salt, and pepper. Toss gently to combine.
- Make space in the center of the baking dish and place the cod fillets on top of the tomato and olive mixture. Drizzle the remaining olive oil over the fillets and season with additional salt and pepper.
- Ensure the cod is nestled among the tomatoes and olives. Bake in the preheated oven for about 20-25 minutes, or until the cod flakes easily with a fork and the tomatoes are soft.
- Remove from the oven and let cool for a minute. Garnish with chopped parsley and serve with lemon wedges.
