Ingredients
  

  • 2 tablespoons olive oil
  • 1 lb ground chicken
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 bell pepper chopped, red or green
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon ground cumin
  • salt and pepper to taste
  • 1 cup cherry tomatoes halved
  • 0.5 cup Kalamata olives pitted and sliced
  • 0.5 cup feta cheese crumbled
  • 0.25 cup fresh parsley chopped
  • 1 lemon juiced

Method
 

  1. Heat the olive oil in a large skillet over medium heat. Add the ground chicken and cook until browned, breaking it apart with a spoon, about 6-8 minutes.
  2. Add the chopped onion and minced garlic to the skillet. Sauté until the onion becomes translucent, about 2-3 minutes.
  3. Stir in the bell pepper, oregano, smoked paprika, cumin, salt, and pepper. Cook for another 3-4 minutes until the bell pepper softens slightly.
  4. Add the cherry tomatoes and olives to the skillet. Mix well and allow the tomatoes to cook down for about 5 minutes.
  5. Sprinkle the crumbled feta cheese over the mixture and let it melt slightly into the skillet.
  6. Remove from heat and stir in the fresh parsley and lemon juice.
  7. Taste and adjust seasoning if necessary. Serve warm.

Notes

Develop rich caramelized bits when browning chicken to form the flavor base. Allow spices to bloom by cooking them with bell pepper to deepen flavors. Let tomatoes cook down for about 5 minutes to create a lightly saucy consistency. Can add chili flakes for extra kick. Consider adding zucchini or spinach for additional vegetables. Perfect for meal prep. Store feta separately if meal prepping to prevent sogginess.
