MEXICAN CHICKEN MARINADE

- 1/4 cup olive oil
- 1/4 cup lime juice
- 3 cloves garlic minced
- 1 tablespoon chili powder
- 1 tablespoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper optional for extra heat
- 1/4 cup fresh cilantro chopped
STEP 1: MIX THE MARINADE
In a medium bowl, combine the olive oil, lime juice, minced garlic, chili powder, ground cumin, smoked paprika, salt, black pepper, and cayenne pepper if you like it spicy. Whisk everything together until well blended.
STEP 2: MARINATE THE CHICKEN
Place your chicken (breasts or thighs) in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure it’s well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to overnight for maximum flavor.
STEP 3: COOK THE CHICKEN
When you’re ready to cook, preheat your grill or skillet over medium-high heat. Remove the chicken from the marinade, letting any excess drip off. Grill or cook the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through.
