Ingredients
  

  • cups all-purpose flour 270g
  • 2 teaspoons baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon fine table salt
  • 2 tablespoons holiday spice mix 14g
  • cup white sugar 67g
  • 1 cup fruitcake fruit blend or dried fruit 120g
  • ½ cup candied mixed peel 85g
  • 1 large egg
  • 1 cup buttermilk or plain yogurt 227g, avoid Greek-style
  • cup melted butter 113g total, divided
  • Non-melting sugar or powdered sugar for dusting

Method
 

  1. Preheat oven to 400°F (200°C). Lightly grease a standard muffin pan or line with paper liners.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, spice mix, sugar, dried fruits, and candied peel until well combined.
  3. In a separate bowl, whisk together egg, buttermilk, and 6 tablespoons of the melted butter until smooth.
  4. Gently fold wet ingredients into dry ingredients with a few quick strokes until just combined. Don't overmix - batter will be stiff.
  5. Fill muffin cups ¾ full with batter. Bake for 20 minutes or until a toothpick inserted in center comes out clean.
  6. Cool in pan for 5 minutes, then transfer to a wire rack. Brush tops with remaining melted butter and dust with sugar while warm.

Notes

Holiday spice mix typically contains cinnamon, nutmeg, cardamom, and cloves. Store in airtight container for up to 3 days at room temperature. Can be frozen for up to 3 months.
