- In a medium bowl, combine crushed Oreo cookies and melted butter. Mix until well combined and resembles wet sand.
- Press the Oreo mixture firmly into the bottom of a 9x9-inch baking dish to form the crust. Set aside.
- In a large mixing bowl, beat softened cream cheese with an electric mixer until smooth and creamy.
- Gradually add granulated sugar and vanilla extract, mixing until fully incorporated.
- Gently fold in whipped topping until light and airy, then add chopped Oreo cookies and fold until evenly distributed.
- Pour the cheesecake filling over the prepared crust and spread evenly with a spatula.
- Sprinkle crushed Oreo cookies on top of the cheesecake layer for garnish.
- Cover the baking dish with plastic wrap and refrigerate for at least 4 hours to set.
- Once set, cut into squares or bars and serve chilled.
