Method
 

  1. In a medium bowl, mix graham cracker crumbs and sugar together. Pour in melted butter and stir until combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Refrigerate to set.
  2. In a large mixing bowl, beat softened cream cheese with an electric mixer until smooth. Gradually add powdered sugar and vanilla extract, mixing until fully incorporated.
  3. In a separate bowl, whip heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until well combined.
  4. Pour the cheesecake filling over the prepared crust and spread evenly. Cover with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
  5. Before serving, toss sliced strawberries with lemon juice and arrange them on top of the cheesecake.
  6. Slice and serve the cheesecake chilled, optionally garnished with fresh mint or whipped cream.
