Method
 

  1. Preheat your oven to 350°F (175°C) and grease a baking dish (9x9 inches or similar size).
  2. In a large bowl, mix together the rolled oats, grated carrots, diced apples, ground cinnamon, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the applesauce, milk, honey or maple syrup, brown sugar, vegetable oil, eggs, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until everything is evenly combined. If desired, fold in the chopped nuts or raisins.
  5. Transfer the mixture to the prepared baking dish and spread it out evenly. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  6. Allow the bake to cool for a few minutes before slicing into squares.
