Ingredients
  

  • 14-20 Frozen Dumplings Trader Joe's or any grocery store brand
  • 3 Tablespoons Red Curry Paste
  • 3 Tablespoons Soy Sauce
  • 2 Tablespoons Sesame Oil or oil of choice
  • 14 ounce Coconut Milk 1 can, full-fat recommended
  • 2 teaspoons Fresh Ginger minced (or 1 tsp dried)
  • 2 cloves Garlic minced (or frozen garlic cubes)
  • 1 Tablespoon Rice Vinegar
  • 2 Tablespoons Honey or real maple syrup
  • Cilantro for garnish
  • 2 Green Onions sliced
  • 1-2 Tablespoons Chili Crunch
  • Sesame Seeds
  • Baby Spinach optional

Equipment

  • Medium baking dish or ovenproof skillet

Method
 

  1. Preheat your oven to 375°F. Grease a medium baking dish or ovenproof skillet.
  2. In a bowl whisk together the coconut milk, red curry paste, honey, soy sauce, sesame oil, rice vinegar, ginger and garlic until smooth. Taste and adjust. Add more soy sauce for saltiness, rice vinegar for brightness, or curry paste for spice.
  3. Place frozen dumplings in a single layer in the baking dish. Pour the sauce evenly over the top making sure the dumplings are mostly covered.
  4. Cover with foil and bake for 20 minutes.
  5. Uncover and bake an additional 5 to 10 minutes until the sauce is bubbling and dumplings are tender. For extra-crispy dumplings, broil for 1 to 2 minutes at the end.
  6. If using baby spinach, immediately top with fresh spinach so it wilts slightly in the heat.
  7. Garnish generously with cilantro, sliced green onions, sesame seeds and chili crisp. Serve immediately.

Notes

Use frozen dumplings from Trader Joe's or any local grocery store. Fresh minced garlic or frozen garlic cubes work best. For extra heat, add more red curry paste or chili crunch. Full-fat coconut milk creates the creamiest sauce.
