- Pat the chicken thighs dry with paper towels and season both sides with salt and pepper. Optionally, marinate for 30 minutes.
- In a small bowl, whisk together honey, soy sauce, minced garlic, and grated ginger. Set aside.
- Heat olive oil in a large skillet over medium-high heat. Add chicken thighs skin-side down and sear for 5-7 minutes until golden brown.
- Flip the chicken and cook for an additional 5 minutes until browned on both sides.
- Add any desired vegetables to the skillet, then pour the honey garlic sauce over the chicken and vegetables. Reduce heat to medium and simmer for 10-15 minutes until chicken is cooked through (internal temperature of 165°F or 75°C).
- Remove from heat and sprinkle with sesame seeds and chopped green onions before serving.
- Serve hot, drizzled with the remaining sauce from the pan.
