Ingredients
  

  • 1 pound Ground beef Provides protein and flavor.
  • 1 tablespoon Olive oil For sautéing the onion and garlic.
  • 1 small Onion, diced Adds sweetness and depth of flavor.
  • 2 cloves Garlic, minced Enhances the overall flavor.
  • 1 packet Taco seasoning Provides the signature taco flavor.
  • 1 can Diced tomatoes with green chilies Adds moisture and flavor.
  • 2 cups Beef broth For cooking the pasta and adding flavor.
  • 8 ounces Penne pasta The main carbohydrate component.
  • 1 cup Black beans, drained and rinsed Adds fiber and protein.
  • 1 cup Corn, frozen or canned Adds sweetness and texture.
  • 1 cup Shredded cheddar cheese For a creamy and cheesy finish.

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add diced onion and cook for 3-4 minutes until soft and translucent.
  • Stir in minced garlic and cook for an additional minute until fragrant.
  • Add ground beef to the pot, breaking it apart with a spoon. Cook until browned and no longer pink, about 5-7 minutes. Drain excess fat if necessary.
  • Sprinkle taco seasoning over the beef and mix well. Pour in diced tomatoes with their juices and beef broth. Bring to a boil, stirring occasionally.
  • Stir in penne pasta, ensuring it is fully submerged in the liquid. Reduce heat to a simmer, cover, and cook for 10-12 minutes, stirring occasionally, until pasta is al dente.
  • Add black beans and corn to the pot, cooking for an additional 2-3 minutes until heated through.
  • Remove from heat and stir in shredded cheddar cheese until melted. Season with salt and pepper to taste.
  • Garnish with chopped cilantro and serve hot.
