Method
- Season chicken breasts with Cajun seasoning on both sides.
- Heat olive oil in a large pot or skillet over medium heat. Add chicken and cook 5-6 minutes per side until golden and cooked through. Remove and set aside.
- In the same pot, saute chopped bell peppers for 2-3 minutes. Add minced garlic and cook for 1 minute until fragrant.
- Stir in orzo pasta, coating it with the vegetable mixture.
- Add chicken broth, bring to a boil, then reduce to a simmer. Cover and cook for 10-12 minutes until orzo is tender and liquid is absorbed.
- Stir in heavy cream and Parmesan cheese until melted and creamy. Add extra broth if needed. Season with more Cajun spice if desired.
- Slice the chicken and return to the pot. Add spinach and stir until wilted. Serve hot with garnishes.
Notes
For a lighter version, use half-and-half instead of heavy cream. You can substitute chicken with shrimp or sausage.
