- Heat a large pot or Dutch oven over medium heat. Add the unsalted butter and olive oil, allowing them to melt together.
- Add the thinly sliced onions and stir gently to coat with the butter and oil. Cook for about 15-20 minutes, stirring occasionally, until caramelized and golden brown.
- Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Pour in the vegetable broth, add the dried thyme, and season with salt and pepper to taste. Stir and bring to a boil.
- Once boiling, add the pasta and stir well. Reduce heat to a simmer and cover the pot. Cook for about 10-12 minutes, or until the pasta is al dente.
- Remove the pot from heat and stir in the grated Gruyère and Parmesan cheese until melted and creamy.
- Ladle the pasta into bowls and garnish with freshly chopped parsley. Serve hot.
