- Let the pork chops rest at room temperature for about 30 minutes.
- Season both sides of the pork chops generously with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add the pork chops and sear for 4-5 minutes on each side until golden brown and cooked to an internal temperature of 145°F (63°C).
- Remove the pork chops from the skillet and let them rest on a plate for 5-10 minutes.
- In the same skillet, melt the butter and add chopped sage. Stir to combine and let it cook for a minute.
- Warm the apple sauce in a small saucepan over low heat. If desired, stir in honey and lemon juice.
- Plate the pork chops, drizzle with sage butter, and serve with warm apple sauce on the side.
