  • 1/4 cup fresh basil chopped
  • 1 egg beaten
  • 1/2 cup all-purpose flour
  • Salt and pepper to taste

Method
 

  1. Begin by pounding the chicken breasts to an even thickness to ensure even cooking.
  2. Season the chicken with salt and pepper.
  3. Set up a breading station with three bowls: one with flour, one with a beaten egg, and another with a mixture of breadcrumbs, Parmesan, and basil.
  4. Coat each chicken breast first in flour, then dip in the egg, and finally coat with the breadcrumb mixture.
  5. In a large frying pan, heat olive oil over medium heat. Fry the cutlets for 5-7 minutes on each side, or until golden and cooked through.
  6. Once cooked, transfer to a plate lined with paper towels to absorb excess oil.
