- Preheat oven to 400°F (200°C).
- In a small saucepan, melt the butter over medium heat. Add minced garlic and cook for 1–2 minutes until fragrant.
- Place carrots on a large baking sheet. Drizzle with the garlic butter and sprinkle with Italian seasoning, salt, and pepper. Toss to coat evenly.
- Roast in the oven for 20–25 minutes, stirring halfway through, until carrots are tender and lightly browned.
- Remove from oven, sprinkle with Parmesan cheese, and return to oven for 3–5 minutes until cheese is melted and golden.
- Garnish with fresh parsley before serving.
Notes
For a crisper texture, broil the carrots for an additional 2–3 minutes after roasting. Use baby carrots for a quicker prep time. Taste and adjust salt before serving.
