Parmesan Garlic Roasted Carrots

Ingredients
  

  • 2 pounds carrots washed, scrubbed, and diagonally cut into 3-inch pieces
  • 4 tablespoons butter
  • 4 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon salt or to taste
  • 1/4 teaspoon freshly ground black pepper
  • 1/3 cup Parmesan cheese grated
  • 1/4 cup fresh parsley chopped

Method
 

  1. Preheat oven to 400°F (200°C).
  2. In a small saucepan, melt the butter over medium heat. Add minced garlic and cook for 1–2 minutes until fragrant.
  3. Place carrots on a large baking sheet. Drizzle with the garlic butter and sprinkle with Italian seasoning, salt, and pepper. Toss to coat evenly.
  4. Roast in the oven for 20–25 minutes, stirring halfway through, until carrots are tender and lightly browned.
  5. Remove from oven, sprinkle with Parmesan cheese, and return to oven for 3–5 minutes until cheese is melted and golden.
  6. Garnish with fresh parsley before serving.

Notes

For a crisper texture, broil the carrots for an additional 2–3 minutes after roasting. Use baby carrots for a quicker prep time. Taste and adjust salt before serving.
