Method
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, mix the creamy peanut butter, granulated sugar, packed brown sugar, and vanilla extract until smooth.
- Add the egg and mix until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add to the peanut butter mixture, stirring until a dough forms.
- Roll the dough into 1-inch balls and roll in granulated sugar. Place on ungreased baking sheets, spaced 2 inches apart.
- Bake for 10-12 minutes until edges are lightly golden. Remove from oven and immediately press a chocolate kiss into the center of each cookie.
- Allow cookies to cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.
