Ingredients

  • 4 salmon fillets
  • 2 tbsp unsalted butter
  • Kosher salt to taste
  • freshly ground black pepper to taste
  • 0.5 cup pecan halves
  • 0.5 cup Panko breadcrumbs
  • 0.25 cup fresh parsley leaves chopped
  • 0.25 cup honey
  • 2 tbsp reduced-sodium soy sauce
  • 1 tbsp brown sugar packed
  • 1 tbsp freshly grated ginger
  • 2 cloves garlic minced
  • 1 lemon juiced
  • 2 tsp cornstarch

Equipment

  • Food processor
  • Large oven-proof skillet
  • small saucepan

Method

  1. Preheat oven to 400°F (200°C).
  2. In a food processor, pulse pecans, Panko, and parsley until mixture resembles coarse crumbs. Season with salt and pepper.
  3. In a large oven-proof skillet, melt butter over medium-high heat. Season salmon with salt and pepper, then dredge in pecan mixture. Sear each fillet for 1–2 minutes per side until golden brown.
  4. Transfer skillet to oven and bake salmon for 10–12 minutes, or until it flakes easily with a fork.
  5. While salmon bakes, combine honey, soy sauce, brown sugar, ginger, garlic, lemon juice, and cornstarch in a small saucepan. Bring to a boil, then reduce heat and simmer until thickened (3–4 minutes).
  6. Drizzle lemon glaze over the salmon and serve immediately.

Notes

Don't over-process pecans; keep texture coarse. Sear salmon before baking to seal in flavor. Simmer glaze just until thickened. Reheat gently in the oven to preserve crust.
