Brownie Base Ingredients

Pecan Pie Topping Ingredients

  • 1 cup Pecans Chopped, adds a delightful crunch and nutty flavor to the topping.

  • 1/4 cup Brown sugar Packed, adds a deep, caramel-like sweetness.

Instructions
 

  • Preheat your oven to 350°F (175°C) and prepare a mini muffin tin by greasing it lightly or using mini muffin liners.
  • In a medium bowl, combine melted butter and granulated sugar. Stir until well mixed, then add eggs and vanilla extract, mixing until smooth.
  • In another bowl, whisk together cocoa powder, flour, salt, and baking powder. Gradually add this dry mixture to the wet ingredients, stirring gently until just combined.
  • Spoon the brownie batter into each muffin cup, filling them about halfway.
  • In a separate bowl, mix together chopped pecans, corn syrup, brown sugar, melted butter, and one egg until well blended.
  • Spoon the pecan mixture over the brownie batter in each muffin cup, filling them to the top.
  • Bake for 20-25 minutes, or until the topping is set and a toothpick inserted into the brownie base comes out with a few moist crumbs.
  • Let the bites cool in the muffin tin for about 10 minutes, then transfer to a wire rack to cool completely.
