Pepperoni Pizzadillas

Ingredients
  

  • 2 large flour tortillas
  • 1 cup shredded mozzarella cheese
  • 3 tablespoons pizza sauce
  • 6 slices pepperoni
  • 1 tablespoon sliced black olives optional

  • Pizza cutter or sharp knife

Method
 

  1. Heat a large non-stick pan over medium heat for about 1 minute.
  2. Place one tortilla in the pan and sprinkle half cup of mozzarella cheese evenly over it, leaving a small border around the edges.
  3. Top with the second tortilla and press down gently with a spatula. Cook for 2 to 4 minutes until the bottom is golden brown and cheese starts melting.
  4. Carefully flip the pizzadilla and cook the other side for 2 to 4 minutes until golden brown.
  5. Spread pizza sauce over the top tortilla, then sprinkle with remaining cheese, pepperoni slices, and black olives if using.
  6. Transfer to a baking sheet and bake in a preheated 400°F oven for 5 to 10 minutes until the cheese on top is melted and bubbly.
  7. Remove from oven and let cool for 1 minute. Slice into wedges with a pizza cutter or sharp knife and serve immediately.

Notes

Preheat pan before cooking for even browning. Use a non-stick pan to prevent sticking. Sprinkle Italian seasoning over cheese for extra flavor. Watch closely to avoid burning. Let cool briefly before slicing to prevent cheese from oozing out.
